 Job Overview:

        To prepare a wide variety of sweet dessert and bread dishes, following traditional and modern recipes, and to create new and exciting desserts that renew our offerings and ensure that pastry menu items are industry-leading in quality and presentation

 DUTIES AND RESPONSIBILITIES

·       Maintain a seasonal pastry menu reflecting Sexy Fish Miami's culinary philosophy with fresh, high-quality ingredients.

·       Supervise and mentor the pastry team to ensure consistency and adherence to culinary standards.

·       Collaborate with management to achieve culinary objectives, including revenue targets and guest satisfaction.

·       Manage pastry inventory, control food costs, and optimize profitability through effective planning and waste reduction.

·       Reconcile stock and generate gross profit (GP).

·       Facilitate communication between the kitchen and wait staff.

·       Ensure proper food preparation and oversee kitchen cleanliness and hygiene.

·       Order supplies as needed and ensure compliance with food cost guidelines.

·       Brief and motivate staff on daily responsibilities and monitor performance.

·       Lead the team to maintain high standards of food preparation and presentation.

·       Report any issues to the Head Chef and keep staff informed of menu changes.

·       Train new employees and ensure adequate staffing in the kitchen.

·       Ensure all food meets quality standards and is properly plated.

·       Maintain quality control in food preparation.

·       Complete additional duties as assigned by management.

PHYSICAL ABILITIES

·       Ability to grasp, lift, move, or push goods on cart/truck weighing up to 25 pounds.

·       Ability to move safely in uneven terrain or in confined spaces.

·       Remain in stationary position for 8 or more hours throughout work shift

·       Ability to tolerate varying conditions of noise level, temperature, illumination, and air quality.

·       Requires manual dexterity to use and operate all necessary equipment.
