We are an established events venue, pub, dining serving a premium collection of draught & craft beers, local London spirits and fine wines. We offer the best in seasonal, fresh, British produce for our menu and have 25 exquisite bedrooms above in our boutique hotel. Just a 10-minute walk from Wimbledon train station and on several bus routes we are easy to reach and busy all year long. With Wimbledon Tennis Championships in the summer and Christmas functions throughout the winter there is never a boring moment at the Dog & Fox Hotel! We are looking for an experienced and passionate Head Chef in Waiting to join our kitchen team and lead our culinary operations. If you’re a strong Sous Chef ready for the next step in your career, this is your opportunity to work in a fast-paced and creative environment, with room to grow and take ownership of the kitchen.

Role Overview:
As Head Chef in Waiting, you will play an integral part in shaping the culinary direction of The Dog and Fox, working closely with the current Head Chef to create menus that showcase fresh, seasonal, and locally sourced produce. You will have the chance to lead the kitchen team, manage day-to-day operations, and implement your ideas while learning the ins and outs of running a high-volume, dynamic kitchen.

This is an ideal role for a skilled Sous Chef looking for their next challenge and the chance to step into a Head Chef position. You will receive mentorship and support to develop your skills and make a seamless transition to Head Chef when the time comes.

Key Responsibilities:

  • Assist the Head Chef in creating seasonal menus, ensuring they align with our focus on fresh, local ingredients.
  • Manage kitchen operations, including food prep, cooking, and presentation.
  • Oversee and support a team of chefs, providing guidance, training, and leadership.
  • Ensure the highest standards of food quality, hygiene, and safety are maintained at all times.
  • Contribute to menu costing, ensuring profitability without compromising on quality.
  • Be involved in stock control, ordering, and inventory management.
  • Ensure consistency in food preparation and presentation in line with The Dog and Fox’s standards.
  • Work closely with front-of-house staff to ensure smooth service and guest satisfaction.
  • Play an active role in banqueting and special events, tailoring menus to suit various functions and occasions.
  • Manage kitchen staff rota and contribute to staff recruitment and retention.

Ideal Candidate:

  • Strong experience as a Sous Chef or senior kitchen role in a high-quality, fast-paced environment.
  • A genuine passion for using fresh, locally sourced ingredients to create seasonal menus.
  • Experience in menu development, costing, and recipe creation.
  • Previous banqueting or large event experience would be advantageous.
  • Excellent leadership and people management skills.
  • Ability to thrive under pressure while maintaining high standards of quality and service.
  • An understanding of health and safety regulations and kitchen hygiene practices.
  • Strong communication skills and a collaborative team player.
  • A desire to progress into a Head Chef role with a forward-thinking and supportive team.
